Does anyone know of literature pointing to NMR experiments that can select for say -CH3 groups attached to -CH2?

If you are asking about amino acid side chain selective experiments ( since I noticed protein and side chain tags on your post) then you should look at the MUSIC family of pulse sequence by Mario Schubert.
