maybe you have a book in your library "NMR of proteins and nucleic acids" by Kurt Wuthrich? There are four chapters on protein assignments.assignments. This is the best I can recommend since I have no sample data suitable for instruction.

maybe you have BMRB data bank has a number of raw data sets with assingments.
Here is one record for a 19 residue peptide, and the spectra are here. There are a couple of other peptide data sets.
